Almond Tabbouleh Salad

We could eat this every day for lunch.  It is healthy, delicious hot, cold, or at room temperature, and very versatile when it comes to veggies you happen to have on hand.  Cous cous can be substituted instead of bulgur.

Almond Tabbouleh Salad (adapted from

1 cup uncooked cracked wheat (bulgur)

2 cups boiling water

2 cups chopped tomatoes

½ cup chopped almonds

drizzle olive oil

½ cup fresh lemon juice

¼ cup chopped mint or parsley

1 tsp salt

¼ tsp pepper

Soak bulgur in boiling water for 1 hour.  Drain.  Fold in all ingredients and chill.
