Eggs in Purgatory

This is more of a method than a recipe.  One night, while enjoying my favorite pasta substitute, spaghetti squash, while my husband was out of town on business, I heard a voice in my ear.

“Where’s the protein, honey?”

Yes, before that voice sounded this was simply going to be a meal of delicious zucchini and onions over squash with a couple of ladles of my homemade tomato sauce.

But then…the protein.  Not that I think that vegetarians have trouble getting protein.  I don’t think they usually do.  But me getting an obvious source of it surely makes my husband happy.  And I remembered a recipe of Giada, or Rachel Ray, or…someone on Food Network, where eggs were cracked into simmering pasta sauce and served over noodles.  Delicious!
