Slow Cooker Sweet Potato and Lentil Stew

The aromas of this recipe make me think of Moroccan cuisine.  The spice is prominent but there is no heat.  This is a fantastic one dish meal!

Slow Cooker Sweet potato and lentil stew

4 cups broth

3 cups diced sweet potatoes

1.25 cups lentils

1 chopped onion

3 minced garlic cloves

½ t cumin

¼ t ginger

¼ t cayenne pepper

¼ t salt

½ T garam masala

1 bay leaf

1 cup frozen peas

½ cup diced tomatoes

½ cup red onion, chopped

lemon juice

Add all ingredients except peas, dice tomatoes, red onion, and lemon juice to crockpot.  Cook on low approximately 6 hours.  Stir in frozen peas.  Serve in bowls topped with diced tomatoes and red onion with a dash of lemon juice.
