Zucchini Crusted Pizza

I found this recipe in my mother’s old recipe box.  I have no idea why it was in the box, or where the recipe came from (other than a scribbled Moosewood written at the end of the ingredient list).  My mother certainly was no cook and this was not a recipe we ever experienced at the dinner table as a child.

Pizza Crust

Zucchini Crusted Pizza (adapted from an old Moosewood recipe)

3.5 cups grated zucchini and carrots

1 egg + 1 egg white, beaten

1/3 cup flour

½ c shredded cheese

½ c nutritional yeast

salt, pepper, basil, oregano to taste

Salt veggies and drain and pat dry to remove as much moisture as possible.  Form a dough out of all ingredients and spread into a 9×13 inch pan.  Bake 30 minutes.  Turn onto a preheated pizza stone and bake 10 minutes more.  Remove from oven and top as desired.  Return pizza to oven and bake until heated through and cheese is melted
