Broccoli Quinoa Salad with Tomatoes and Red Onion

This satisfying lunch is loaded with whole grains, vegetables, and protein.

1/4 cup steamed broccoli, chopped

1/4 diced tomatoes

2 heaping T red onion

1/4 cup quinoa, rinsed

1/2 cup water

2 hard cooked egg whites (optional)

salt, pepper, lemon juice

Bring 1/2 cup water to a boil.  Add rinsed quinoa and simmer 15 minutes until all liquid is absorbed.  Once cooked, toss with vegetables and season with salt, pepper, and a sprinkle of lemon juice.  Add chopped egg whites and enjoy.
